Honey Cake


    1 1/4 cups of honey
    1 cup of oil
    2 teaspoons of coffee dissolved in 1/2 cup of boiling water
    1 1/4 cups of brown sugar
    4 eggs
    4 cups of self raising flour
    1 1/2 teaspoons of cinnamon
    1 1/2 teaspoons of mixed spice
    1 teaspoon of ginger
    1 teaspoon of bicarbonate of soda

    1. Mix together the honey, oil, coffee and sugar.

    2. Beat in the eggs.

    3. Sift the flour, spices and bicorbonate soda together and stir in the mixture made before.

    4. Pour into a greased tray.

    5. Bake at 165 degrees celsius for 1 to 1 1/4 hours.
