Matzo Stuffing

    10-12 broken matzo
    500mls or 2 cups of vegetable stock or broth
    1 egg, beaten
    2 tablespoon schmaltz, margarine or vegetable oil
    turkey or chicken giblets, cooked and chopped
    225 grams sliced button mushrooms, sauteed
    1 stalk celery, chopped and sauteed
    1 large onion, chopped and sauteed
    1/2 cup slivered almonds
    freshly chopped parsley
    salt and freshly ground pepper to taste

    1. In a large bowl combine all ingredients and mix well.

    2. Stuff the Turkey or chickens just before roasting.
